Goanese Shrimp Curry

In the little tropical landscaped state off the Western coast of India, Goa is home to amazing seafood which is the foundation of its cuisine. Shrimp in a coconut curry is one of the regions favorites and can be prepared in a number of ways. The most common and, in my opinion the best, is using fresh local shrimp simmered in a thick, chile heavy coconut sauce.

Cold Curried Summer Squash Soup

This unique creamy soup is lightly spicy and served chilled with ice cubes made of lime juice and Thai basil. The bit of acidity and anise flavor are prevalent when the cubes melt.

Pumpkin-Chickpea Curry

This curry is one of my favorites and one I love to curl up with on a cold winter day. The warm hints of curry, cinnamon and hearty vegetables is the perfect stick to your bones meal.

Burmese Eggplant Curry

I love eggplant and in this recipe it’s slow cooked to silky softness in a beautifully rich curry with a shrimp paste foundation. The combination of these ingredients make this a dish you will come back to again and again.
